For our Deca we choose the Swiss Water® Process: careful decaffeination without added chemical solvents, using water, time, temperature, natural green coffee extract and carbon filtration. Our greatest challenge was not simply removing caffeine, but preserving as much of the coffee’s original aroma and character as possible.
